Beef Eye of Round is a lean, elongated muscle from the hindquarter round, characterised by a firm, uniform grain and distinctive beef flavour. Carefully selected Latvian beef, ideal for roasting, gentle cooking and thin slicing.
CEPLĪŠI M.S. Beef Eye of Round is obtained from the hindquarter round of carefully selected Latvian cattle.
Eye of Round is a long, compact muscle with relatively little fat and a consistent fibre structure. Unlike highly marbled steak cuts such as Ribeye, it contains comparatively little intramuscular fat.
For this reason, choosing the right cooking temperature, cooking time and slicing technique is especially important.
When prepared correctly, Eye of Round offers distinctive beef flavour and versatility for a wide range of dishes.
Lean Muscle Structure. Eye of Round generally contains relatively little fat, making it suitable for customers who prefer leaner beef.
Uniform Shape. Its elongated, consistent shape makes it convenient for whole-muscle roasting and portioning.
Distinctive Beef Flavour. Pairs well with herbs, garlic, mustard and savoury sauces.
Versatile Cooking Options. Suitable for roasts, thinly sliced roast beef, braised dishes and other beef recipes.
Professional Kitchen Convenience. Its regular shape helps with portion planning and slicing in restaurants and catering operations.
Roast Beef. Cook the whole muscle gently in the oven, monitoring the internal temperature.
Thinly Sliced Roast Beef. After cooking and resting, slice very thinly against the grain. Suitable for sandwiches, salads and cold platters.
Beef in Sauce. Cut into portions and cook gently in stock or sauce until the desired tenderness is reached.
Braised Beef. Slow-cook with root vegetables, onions and herbs.
Thin Beef Slices for Skillet Dishes. Very thin slices cut against the grain can be used for quick cooking, particularly when properly tenderised or otherwise prepared.
At CEPLĪŠI M.S., we specialise in producing high-quality Latvian beef and work with cattle farmers who focus on feeding practices and desirable meat characteristics.
Every beef carcass is individually assessed for muscle development, meat colour and fat cover. We also measure the pH of every carcass as part of our quality control process.
Our beef steak cuts are aged for at least 15 days to support tenderness and flavour development.
This approach helps us select beef according to the quality standards of CEPLĪŠI M.S.
1. Preparation. Remove the beef from its vacuum packaging, pat dry and season with salt, pepper or your preferred herbs.
2. Browning. For a roast, briefly sear the surface in a hot pan to develop flavour.
3. Gentle Roasting. Continue cooking in an oven at a moderate temperature, such as 110–130°C, until the internal temperature required by your recipe and applicable food safety guidance is reached.
4. Resting. Allow the meat to rest after cooking to reduce moisture loss when slicing.
5. Thin Slicing. Slice the cooked beef as thinly as possible against the grain. This is particularly important for improving tenderness when eating.
For tender braised beef, cook slowly with sufficient liquid until the meat reaches the desired texture.
Important: Eye of Round is relatively lean. Excessively high temperatures or prolonged dry cooking can make the meat dry and firm.
Serve with mashed potatoes, roasted root vegetables, mushroom sauce, mustard sauce, green salads or herb butter.
Thinly sliced roast beef is also suitable for cold serving with pickled vegetables and horseradish sauce.
