CEPLĪŠI M.S. Beef Sirloin Tender is a quality beef cut sourced from carefully selected cattle raised in Latvia. It offers versatile preparation possibilities for dishes where beef flavour, precise cooking and reliable raw material quality are important.
Sirloin Tender is a commercial cut designation whose exact anatomical definition may depend on the cutting specification used.
It should not automatically be confused with Beef Tenderloin or traditional Striploin.
The tenderness, texture and degree of marbling depend on the individual muscle, the characteristics of the animal and the preparation of the cut.
CEPLĪŠI M.S. Sirloin Tender is supplied chilled and vacuum-packed, allowing the beef to be portioned according to the intended recipe.
Carefully Selected Latvian Beef. We pay particular attention to raw material selection and quality control.

Chilled and Vacuum-Packed. Supplied in a practical format for refrigerated storage and further preparation.
Portioned Beef Dishes. Cut into portions while considering the grain direction and connective tissue.

Oven-Cooked Beef. Prepare the cut whole using a temperature and cooking time appropriate to its structure.
Beef with Sauce. Serve with mushroom sauce, pepper sauce or beef jus.
Restaurant Dishes. Suitable for portion planning and varied menu applications when the exact characteristics of the cut are taken into account.
CEPLĪŠI M.S. specialises in producing high-quality Latvian beef.
We work with Latvian cattle farmers who focus on feeding practices and desirable meat characteristics.
Every beef carcass is individually assessed for muscle development, meat colour and fat cover. We also measure the pH of every carcass as part of our quality control process.
Our beef steak cuts are aged for at least 15 days to support tenderness and flavour development.
This approach helps us select beef according to the quality standards of CEPLĪŠI M.S.
1. Preparation. Remove the beef from its vacuum packaging and pat dry.
2. Assess the Cut. Examine the muscle grain, fat distribution and visible connective tissue.
3. Seasoning. Use salt, freshly ground black pepper, garlic, thyme or rosemary.
4. Choose the Cooking Method. More tender sections may be suitable for pan-frying, while firmer sections may benefit from gentle oven cooking or braising.
5. Monitor Doneness. Use a food thermometer. For whole beef cuts, a minimum internal temperature of 63°C followed by at least 3 minutes of resting is a commonly recommended food safety benchmark.
6. Rest and Serve. Allow the meat to rest before slicing against the grain.
Cooking time depends on the exact muscle, the size of the cut and the preparation method.
Serve with mashed potatoes, roasted potatoes, grilled vegetables, asparagus or fresh salad.
Complement the beef with mushroom sauce, pepper sauce or herb butter.
