Beef Chuck Roll is a versatile cut from the shoulder and neck region of the beef forequarter. Known for its rich beef flavour, variable natural marbling and distinctive muscle structure, CEPLĪŠI M.S. Chuck Roll is sourced from carefully selected Latvian cattle and supplied chilled and vacuum-packed.
Chuck Roll is one of the most versatile cuts from the beef forequarter. It consists of several muscles that differ in tenderness, connective tissue content and marbling.
Certain sections offer sufficient tenderness and marbling for steak preparation when correctly separated and trimmed. Other sections are particularly well suited to slow roasting, braising and prolonged gentle cooking.
This versatility makes Chuck Roll an attractive choice for home cooks and professional kitchens alike.
Carefully Selected Latvian Beef. Our beef is sourced from selected cattle raised in Latvia, with particular attention to quality.
Rich Beef Flavour. Chuck Roll is valued for its distinctive and full-bodied beef flavour.
Natural Marbling. Depending on the individual muscle, intramuscular fat can contribute to juiciness and flavour.
Multiple Muscles Within One Cut. Different sections can be prepared using different cooking methods.
Suitable for Steaks and Slow Cooking. Properly separated and trimmed muscles may be used for steaks, while firmer sections are ideal for braising.
Professional Kitchen Versatility. The cut offers flexibility in portion preparation and menu planning.
Chuck Roll is not simply the entire beef neck. It is a defined forequarter cut, although its exact boundaries may vary according to the cutting specification used.
The cut contains several muscles with different structural characteristics.
Some sections can be suitable for relatively quick cooking when properly prepared, while muscles with more connective tissue benefit from prolonged cooking.
The ideal cooking method therefore depends on the individual muscle and how the cut has been prepared.
Slow-Roasted Chuck Roll. Roast the whole cut gently with herbs and, where appropriate, stock.
Braised Beef. Cut into portions and slowly cook with onions, carrots, garlic and stock until tender.
Chuck Steaks. Selected muscles can be separated, trimmed and prepared as steaks when their structure is suitable.
Pulled Beef. Cook slowly until the meat becomes tender enough to shred. Ideal for burgers, sandwiches and wraps.
Beef Goulash. Dice the beef and simmer with vegetables, paprika and seasoning.
Beef Pot Roast. Prepare with root vegetables and serve with a rich beef gravy.
CEPLĪŠI M.S. specialises in producing high-quality Latvian beef.
We work with Latvian cattle farmers who focus on feeding practices and desirable meat characteristics.
Every beef carcass is individually assessed for muscle development, meat colour and fat cover. We also measure the pH of every carcass as part of our quality control process.
Our beef steak cuts are aged for at least 15 days to support tenderness and flavour development.
This approach helps us select beef according to the quality standards of CEPLĪŠI M.S.
1. Preparation. Remove the beef from its vacuum packaging and pat dry.
2. Assess the Cut. Examine the muscle structure and connective tissue. For steaks, select sections suitable for that cooking method.
3. Seasoning. Add salt, black pepper, garlic, thyme or rosemary.
4. Browning. For roasts or braised dishes, briefly sear the meat in a hot pan.
5. Slow Cooking. For braising or slow roasting, place the beef in a covered ovenproof dish with stock and vegetables. Cook at approximately 140–160°C until tender.
6. Check Tenderness. For slow-cooked sections, actual tenderness is the key indicator. Pulled beef often becomes suitable for shredding at approximately 90–95°C internally, although the final result should be judged by texture.
7. Rest and Serve. Allow the beef to rest before slicing against the grain or shredding.
When preparing selected Chuck Roll muscles as steaks, adjust the cooking method to the specific muscle and its structure.
Chuck Roll pairs well with mashed potatoes, roasted root vegetables, grilled vegetables, mushroom sauce and rich beef gravy.
Slow-cooked shredded beef is excellent in burgers, wraps, sandwiches and other hearty dishes.
