Beef Brisket – Premium Latvian Beef for BBQ Smoking and Slow Cooking

CEPLĪŠI M.S. Beef Brisket is a high-quality beef breast cut sourced from carefully selected cattle raised in Latvia. Known for its rich beef flavour, natural fat layers and collagen-rich connective tissue, Brisket is ideal for long BBQ smoking, slow roasting and braising. With proper low-and-slow cooking, the meat develops a tender, succulent texture and deep flavour. The product is supplied chilled and vacuum-packed.

Beef Brisket comes from the lower chest of the beef forequarter. These muscles help support the animal's front body weight, resulting in a relatively dense structure and substantial connective tissue.

Anatomically, Brisket consists primarily of two muscles: Pectoralis profundus and Pectoralis superficialis.

In BBQ terminology, these are commonly known as the Flat and Point.

Flat is the leaner, more uniform section, particularly suitable for slicing after cooking.

Point is a thicker section with more pronounced fat layers, often used for rich BBQ dishes and Burnt Ends.

The exact composition of a Brisket cut depends on the butchery specification. Not every Brisket product necessarily includes both sections in full.

Brisket is one of the most recognised cuts in American BBQ. In Texas-style barbecue, it is traditionally smoked for many hours at a low temperature, often with simple salt and black pepper seasoning.

During slow cooking, collagen gradually converts into gelatin while some of the fat renders, helping create the characteristic tender texture.

CEPLĪŠI M.S. Beef Brisket is supplied chilled and vacuum-packed.

Characteristics of CEPLĪŠI M.S. Beef Brisket

Carefully Selected Latvian Beef. Sourced from selected cattle raised in Latvia according to our quality requirements.

Rich Beef Flavour. The chest muscles offer a distinctive, full-bodied beef taste.

Collagen-Rich Connective Tissue. Long, gentle cooking helps soften the connective tissue and develop tenderness.

Natural Fat Layers. Fat contributes flavour and helps maintain juiciness during cooking.

Ideal for Low & Slow Cooking. Brisket is one of the classic cuts for traditional BBQ smoking.

Versatile Preparation. Suitable for smoking, slow roasting, braising, pulled beef and BBQ dishes.

Chilled and Vacuum-Packed. Supplied in a practical refrigerated format.

Why Choose Beef Brisket?

Beef Brisket is an excellent choice for customers who appreciate rich beef flavour and authentic BBQ cooking.

Unlike Ribeye, Striploin or Tenderloin steaks, Brisket is not intended for quick pan-searing.

Its full potential develops during long, gentle cooking, when connective tissue softens and the meat becomes tender.

In a BBQ smoker, Brisket can develop a dark, flavourful outer bark while retaining moisture inside.

Brisket is suitable for professional restaurant kitchens, BBQ caterers and home cooks preparing larger meals for family gatherings or special occasions.

Culinary Uses

Texas-Style Smoked Brisket. Slowly smoked beef brisket seasoned with salt and black pepper.

Low & Slow BBQ Brisket. Cooked gently at a low temperature until tender.

Brisket Burnt Ends. Flavourful, glazed BBQ cubes prepared from a suitable, fattier section of Brisket.

Braised Beef Brisket. Slowly cooked with root vegetables, garlic, beef stock and herbs.

Oven-Roasted Brisket. Slow-cooked in a covered dish or suitable roasting wrap.

Pulled Brisket. Shredded slow-cooked beef for burgers, sandwiches, wraps and other dishes.

CEPLĪŠI M.S. – Carefully Selected Latvian Beef

CEPLĪŠI M.S. specialises in producing high-quality Latvian beef.

We work with Latvian cattle farmers who focus on feeding practices and desirable meat characteristics.

Every beef carcass is individually assessed for muscle development, meat colour and fat cover. We also measure the pH of every carcass as part of our quality control process.

Our beef steak cuts are aged for at least 15 days to support tenderness and flavour development.

This approach helps us select beef according to the quality standards of CEPLĪŠI M.S.

How to Prepare Beef Brisket in a BBQ Smoker

1. Prepare the Meat. Remove the Brisket from its vacuum packaging and pat dry.

2. Trim the Fat. Remove excessively thick surface fat and hard fat deposits if necessary. For smoking, a fat layer of approximately 5–7 mm is often retained, depending on the cut and desired result.

3. Season. For classic Texas BBQ, use coarse salt and freshly ground black pepper.

4. Preheat the Smoker. Aim for a cooking chamber temperature of approximately 110–130°C.

5. Begin Smoking. Place the Brisket in the smoker and cook until a well-developed outer bark forms.

6. Manage the Stall. During cooking, the internal temperature may rise slowly or temporarily stop increasing, often around 65–75°C. This is commonly known as the stall.

7. Wrap if Necessary. Once the bark is established, the Brisket may be wrapped in food-safe BBQ paper or foil to reduce moisture loss and help continue cooking.

8. Continue Cooking. Tender Brisket is often achieved at approximately 92–96°C internal temperature, although the exact finishing temperature varies.

9. Check Tenderness. A thermometer probe should slide into the meat with very little resistance, especially in the leaner Flat section.

10. Rest. Allow the Brisket to rest after cooking while maintaining safe temperatures. Large cuts are often rested for 1–3 hours.

11. Slice Correctly. Slice against the grain. The grain direction may differ between the Flat and Point sections.

How Long Does Beef Brisket Take to Cook?

A large whole Brisket often requires approximately 10–16 hours or longer in a BBQ smoker.

The exact time depends on weight, thickness, fat content, smoker temperature and cooking method.

Smaller Brisket cuts may cook substantially faster.

Actual tenderness is more important than cooking time alone.

Serving Suggestions

Beef Brisket pairs beautifully with mashed potatoes, roasted potatoes, creamy polenta, grilled vegetables, coleslaw and pickles.

Texas-style Brisket is best served sliced, with a little beef jus or BBQ sauce.

Nav ko teikt. Viss lieliski. Komunikācija, piegāde kvalitāte. Viss bija, kā solīts. Gaļa bija ļoti laba. 16 stundas zemā temperatūrā gatavoju cepeškrāsnī un rezultāts bija nepārspējams. Mīkstāku un aromātiskāku gaļu nebijām ēduši.
