CEPLĪŠI M.S. Boneless Beef Shoulder is a quality forequarter cut sourced from carefully selected cattle raised in Latvia. Known for its rich beef flavour, varied muscle structure and excellent suitability for slow cooking, it is ideal for braised beef, roasts, pulled beef and hearty dishes. The product is supplied chilled and vacuum-packed.
Beef Shoulder comes from the forequarter and consists of several muscles that are actively used during the animal's life.
As a result, this part of the carcass generally contains more connective tissue than naturally tender steak cuts.
When cooked slowly with sufficient moisture, collagen gradually converts into gelatin, helping to produce tender, succulent meat and rich cooking juices.
Certain individual shoulder muscles, when professionally separated and trimmed, can also be used for steaks, including Flat Iron and Petite Tender. However, a whole boneless shoulder should not be confused with a single steak cut.
CEPLĪŠI M.S. Boneless Beef Shoulder offers flexibility for portioning and further preparation.
Carefully Selected Latvian Beef. Sourced from selected cattle raised in Latvia according to our quality requirements.
Rich Beef Flavour. The actively used shoulder muscles offer a distinctive, full-bodied taste.
Natural Connective Tissue. Slow, gentle cooking allows connective tissue to soften and contribute to a succulent texture.
Versatile Applications. Suitable for braising, roasts, pulled beef, soups and meat sauces.
Boneless Format. Convenient for portioning and further processing.
Chilled and Vacuum-Packed. Supplied in a practical format for refrigerated storage.
Beef Shoulder is an excellent choice for customers who appreciate rich beef flavour and want to prepare satisfying, high-quality meals.
Its main advantage is its suitability for slow cooking.
Gentle braising or slow roasting allows the connective tissue to soften, creating tender beef and richly flavoured sauces.
Boneless Shoulder is also practical for restaurants and catering businesses preparing slow-cooked beef, plated dishes and hearty menu items.
Slow-Braised Beef Shoulder. Cook with root vegetables, onions, garlic and stock until tender.
Beef Shoulder Pot Roast. Cook the whole cut in a covered pot with a small amount of liquid.
Pulled Beef. Slow-cook until the meat can be easily shredded.
Beef Ragù. Dice the beef and gently braise with vegetables and seasonings.
Beef Goulash. Prepare with paprika, onions and tomatoes.
Beef Soup. Use in richly flavoured soups and slow-cooked dishes.
CEPLĪŠI M.S. specialises in producing high-quality Latvian beef.
We work with Latvian cattle farmers who focus on feeding practices and desirable meat characteristics.
Every beef carcass is individually assessed for muscle development, meat colour and fat cover. We also measure the pH of every carcass as part of our quality control process.
Our beef steak cuts are aged for at least 15 days to support tenderness and flavour development.
This approach helps us select beef according to the quality standards of CEPLĪŠI M.S.
1. Preparation. Remove the beef from its vacuum packaging and pat dry.
2. Portioning. Leave whole or cut into large cubes depending on the recipe.
3. Seasoning. Use salt, freshly ground black pepper, garlic, thyme, rosemary or bay leaves.
4. Browning. Sear the beef in a hot pan before braising to develop flavour.
5. Slow Cooking. Place the meat in a covered pot with stock or another suitable liquid and cook gently until the connective tissue softens.
6. Check Tenderness. For slow-cooked shoulder, texture is as important as internal temperature. The meat should be easy to separate with a fork.
7. Rest and Serve. Allow the beef to rest briefly before slicing.
For shoulder cuts intended for slow cooking, a tender texture is often achieved at an internal temperature of approximately 88–96°C, depending on the muscle, size and cooking method. This is a texture guideline, not a minimum food safety temperature.
Boneless Beef Shoulder pairs well with mashed potatoes, roasted root vegetables, buckwheat, rice, creamy polenta and seasonal vegetables.
Serve slow-cooked beef with its cooking juices or a reduced sauce, finished with fresh herbs.
